Also, "Akira Kurasawa and Intertextual Cinema", is a deeply fascinating book, it's by James Goodwin and was published by The Johns Hopkins University Press in 1994 - so it's not new by any means, but it's well worth reading as it contains insights and quotes from Akira Kurosawa and many others in the industry.   I've barely begun it but it's so interesting...
I've been reading "The Animé Art of Hayao Miyazaki" by Dani Cavallaro it's a very informative book if you are interested in Animation, Films, Animé, Hayao Miyazaki or anything to do with the Studio Ghibli films like "Howl's Moving Castle" Miyazaki, H.(2004), "Laputa" Miyazaki, H.(1986), "Nausicaä of the Valley of the Wind" Miyazaki, H. (1984) - this book has some fascinating insights into the film industry generally and the Animé industry specifically as well as other areas of both European and Japanese films, particularly Akira Kurosawa and John Lassiter.
